CHEF BOBBY SILVA

Executive Chef

California-born and Las Vegas raised, Chef Bobby Silva has been a part of Las Vegas’ flourishing food and beverage scene for more than 17 years.

Looking for a challenge, Silva was inspired by the fast-pace of restaurant kitchens and enrolled in the culinary arts program at College of Southern Nevada and LeCordon Bleu. There, he learned the techniques and fundamentals of cooking; the rest he learned in the kitchen – watching and working under and alongside the expert craftsmen and chefs he was surrounded by.

Throughout his years in the kitchen, Silva has worked with some of the best in the business and at leading restaurants across the Vegas Valley. Launching his career as a sous chef at Downtown Las Vegas’ beloved Triple George Grill, Silva quickly learned the ropes and found his way to the Las Vegas Strip to join Rick Moonen at RM Seafood. After honing his seafood skills, he joined the Sushi Samba team as Executive Sous Chef, during which he appeared on Season 5 of Top Chef Masters with Sushi Samba’s then Executive Chef Herb Wilson.

After a stint as Corporate Executive Sous Chef for MinaGroup, Silva returned to the Samba family as Lead Culinary Trainer for Samba Brands Management.

Now Silva will lead the charge as Executive Chef of the Las Vegas Strip’s newest hot spot, Sake Rok, opening April 4 at The Park. Sake Rok will offer guests a social dining experience with fresh and innovative Japanese and Japanese-American dishes.

Even when he’s not working, Silva finds himself in the kitchen, as he enjoys entertaining and cooking for his family, including his two sons. But on the rare instances when Silva’s not in the kitchen, you can find him hiking and wake boarding during summer months and checking out the hottest bars and restaurants in Vegas.

ALBERT MACK

Chief Executive Officer

Hailing from one of Las Vegas' prominent and revolutionary families, Albert Mack has deep roots in Las Vegas’ history. Grandson of famous Las Vegan Jerome Mack, of Thomas & Mack, who was the President of the Riviera casino, Director of the Four Queens and Dunes casinos, owner of Valley Bank of Nevada and one of the founders of the University of Nevada, Las Vegas, it is only natural that Albert would grow up to make a name for himself in this burgeoning city.

With a deep and underlying passion for hospitality, Albert Mack has run nightclubs since college, and since has been accredited for creating innovative and cutting-edge dining and nightlife experiences in some of the hottest venues on the strip and beyond.

Holding a Bachelors’ Degree in Communications from Tulane University and a Masters’ Degree in Business Administration from Loyola Marymount University, Mack worked in real estate development before making the jump to hospitality at Wynn & Encore Las Vegas. Working his way through all operational departments in the Executive Management Program, with Steve Wynn as his mentor, Mack gained first-hand knowledge of the hospitality industry and honed his communication and managerial skills. Mack continued on with Wynn Resorts and became part of the Nightlcub management team for Surrender and Encore Beach Club – two exclusive clubs on the famous Las Vegas Strip.

Now an owner of one of Las Vegas’ most exciting new concepts, Sake Rok, Mack is bringing his dining and nightlife experience full circle. Anticipated to be the place to see and be seen, Sake Rok will hit the Las Vegas Strip in early spring 2016 in conjunction with the debut of MGM Resorts International’s “The Park.”

In his spare time, Mack enjoys time with his wife Karissa, son Greyson, and their Pomeranian/Chihuahua mix, Tank. Mack is also a proud supporter of the UNLV Foundation and Opportunity Village.

BILL JONES

Chief Financial Officer

Born in St. Louis, Missouri, Bill Jones earned a degree in finance and accounting from Tulane University. Upon graduation, Jones joined PricewaterhouseCoopers in Chicago to provide private and public companies with merger and acquisition consulting services on global deals ranging from $10M to $7B. Jones is a CPA and a true expert in the financial world.

Seeking the opportunity to expand his talents, Jones began looking for an industry that combined his expertise – economics and finance – while providing people with an immersive experience. He was ultimately drawn to the hospitality industry, recognizing that even though we live in a digital age and many hours are spent behind a computer screen, relationships are built and memories are made while connecting around a dinner table.

“As a restaurateur I have the opportunity to be a catalyst in encouraging positive and timeless human interaction,” says Jones. “No matter how much of our lives go digital, breaking bread together can never be outsourced and will never go out of style.”

Inspired to create a truly unique and distinctive atmosphere, Jones joined the Sake Rok team to lend his financial background and broad business knowledge to the concept. Jones and his team strive to develop a one-of-a-kind dining, drinking and theatrical experience on the Las Vegas Strip.

When he steps away from overseeing the development of Sake Rok, Bill enjoys spending time with his wife Blakeley and son William as well as hiking, camping, motorcycle riding, reading and playing racquetball.

TODD LUNGER

Chief Operating Officer

An accomplished hospitality and nightlife professional with over eighteen years of nightclub, restaurant and gaming experience, Todd Lunger has managed food & beverage, dayclub and nightclub operations for some of the most prestigious properties around the globe.

Born in Arizona, Lunger moved to Las Vegas at an early age. Starting at just 15 years old, Lunger joined the restaurant industry, working through various positions and immersing himself in the Las Vegas food and beveragescene. Starting as a busser at Four Seasons Las Vegas and working his way up to a prestigious Sommelier role, he positioned himself as Wine Director at multiple outlets within Caesars Palace. Lunger then joined the team at MGM Resorts International where he oversaw multiple venues, shows, and the entire beverage department, while managing more than 200 employees.

Following his time at MGM Resorts International, Lunger joined forces with the legendary Tao Group and managed multiple outlets while achieving record sales. Lunger then moved to Wynn Las Vegas to serve as Manager of Nightclub Operations, managing venues producing over $69M annually and more than 5,000 covers per day. Lunger brought his years of expertise to the forefront of managerial operations by taking on the role of Corporate General Manager at The One Group, a market leader in the hospitality industry.

His most recent endeavors brought him to the United Arab Emirates to open up the largest venue in the Middle East. The highly anticipated Pacha Nightclub and Restaurant opened in the prestigious Souk Madinat. Lunger created the full infrastructure and led the recruiting program for the venue, which includes two restaurants, three nightclubs and an acrobatic show.

Through his company Mojo Group, Lunger is currently expanding food and beverage brands throughout the world, and also is a consultant for the global Food and Beverage company, V&E; Group based out of Mexico City.

As Lunger lives and breathes the food and beverage scene and hospitality world, he continues to lend his talents toward the development of cutting edge concepts across the globe. His newest project, Sake Rok, is set to bring a new level of dining and nightlife experience to the Las Vegas Strip in early spring of 2016.
